I was in a French bistro and had a chicken salad sandwich on a croissant. It was so tasty. There was one ingredient that I couldn't identify. Turns out it was tarragon! It has been in my chicken salad ever since. I love learning the basics of a dish. Once I have my base, I try various ways to make it better or to duplicate a taste I had in a restaurant.
